Between the manic streets of Mumbai and the hammocks of sleepy Goa grow some of
the most aromatic and succulent mangoes in the country on what is fondly known
as the Konkan Coast. When we drove down this famous coast on an ancient,
sputtering motorcycle, we found ourselves tucking into steaming hot 'pakoras'
served with this spicy mango sauce amongst the terraced mango groves. Try this
sauce as a dip with crisps and finger food. You can even use it as fruity salad
dressing!
