Japanese tofu making demands fastidious attention to detail. For the best
results you need time and a delicate touch. No shortcuts or scrimping on
ingredients!
We soak our organic, sustainable soya beans overnight to deliver a luxuriously
creamy soya milk that is perfect for making our tofu.
The milk is mixed with a special, authentic ingredients called Nigari, which
comes from natural salts derived from Japanese seawater. It helps to separate
the curds (the solids that we turn into tofu). Our soya bean curds are then
gently pasteurised to keep in all the goodness (we don't allow any harsh boiling
here!)
As the curds settle, they form a dense blanket of loveliness that is then
carefully pressed to deliver the perfect texture.
