This flinty little number from the famous hills above Saint-Satur is pale and
très chic. With citrus aromas and just a hint of minerality, it’s perfect with
white meat, lemony asparagus, tempura vegetables of simply as an aperitif. A
Sancerre sensation. Santé.
Produced by the partnership between Domaine Gérard Fiou and Henri Bourgeois,
using low-yielding old vines (some over 60 years old) grown on flinted
hillsides, this classic Sancerre receives six months of lees ageing lends weight
and concentration. Produced in the same area of the Loire as Crottin de
Chavignol; its smoky minerality and refreshing acidity make an excellent match
to the famous goats’ cheese.
