To keep the cultures in the cheese active (they're to thank for the distinctive 'blue' bite and mouldy rind!) Our packaging is designed to allow a very small amount of oxygen through. If you've got any questions about the wheel you receive, please do get in touch. It's pasteurised and left to mature for a number of weeks, until it's ready to wrap and pack.
