Grana Padano Riserva by Giovanni Ferrari is made with cows' milk and matures in
the Ferrari family's cellars for at least 20 months. During this time, it
develops its intensely spicy taste, which is softer and milder than Parmigiano
Reggiano. In addition to the incomparable taste, this Italian hard cheese is
characterised by its straw yellow colour and its coarse-grained consistency.
Grana Padano tastes pure as an aperitif with wine or can be used to refine and
enhance pasta dishes. It was awarded the gold medal in the best Grana Padano
Category at the International Cheese Awards 2018 in Nantwich.
Grana Padano is made in five regions and 32 provinces in the Po Valley between
Piedmont and Veneto. The best Grana Padano is aged for at least 20 months and is
required to pass a thorough examination by the Grana Padano consortium. They are
also allowed to bear the designation "Riserva". Only about five percent of all
Grana Padano products pass this stringent cheese test. The Grana Padano Riserva
by Giovanni Ferrari can adorn itself with this special name.
Grana Padano cheese can be eaten grated or in the form of shavings. It is
full-bodied in flavour and is great sprinkled on pasta dishes, slipped into
stuffings, or added to sauces, risottos and quiche fillings. Its superior
flavour can be enhanced through being paired with dessert wines, fortified wines
and full-bodied, aged reds.
