Located 30km off the north coast of mainland Papua New Guinea, the island of
Karkar is an almost perfect circle. It is some 60 miles across and essentially
one large volcano, whose summit is visible nearly 50 miles away across the
water.
All the cocoa on Karkar comes from two family-owned farms. Using knowledge built
up over generations, the beans are fermented in ancient wooden boxes next to the
sun-drenched beach on the north shore. The beans are then dried on concrete
platforms, where they continue to develop their intense flavours of dates,
walnut and red fruits.
This is a bar of unrivalled quality that will excite even the most discerning
chocolate connoisseur.
