The exceptional quality of our signature Pache begins with the expertly
cultivated grain at its heart.
Grown in the area of Manfredonia in Puglia in warm temperatures and fertile
soil, the Matt grain durum wheat semolina is perfect for creating delicate
artisanal pasta.
Pache (from dialect in the Dolomites meaning 'a pat on the shoulder') is shaped
by an authentic individually numbered bronze die for a perfectly rough texture,
with a cylindrical shape ideal for capturing classic rich tomato sauces.
Crafted in Italy by the Felicetti family, combining artisanal Matt grain wheat
with spring water from the Dolomites before drying in the mountain air.
