The exceptional quality of our signature Spiralotti begins with the expertly
cultivated grain at its heart.
Grown in the sun-soaked area of Murge and Daunia, in Puglia and named after the
Italian senator Raffaele Cappelli, the Il cappelli grain durum wheat semolina is
perfect for creating delicate artisanal pasta.
Spiralotti (from the Italian for 'small spiral') is shaped by an authentic
individually numbered bronze die for a perfectly rough texture, with a spiral
shape ideal for al forno bakes or capturing flavoursome pesto.
Crafted by the Felicetti family, combining artisanal Il Cappelli grain wheat
with spring water from the Dolomites before drying in the mountain air.
