The wheat in our Organico pasta is grown as lovingly and intelligently as
possible from even before the seed is planted! Our pasta is made only 100% with
the hard Italian durum wheat that gives good pasta its name. The dough is mixed
using a local mountain spring water and the shapes are formed using bronze
plates which leaves a rougher surface ideal to help the sauce stick. Our pasta
is dried very slowly to maintain its nutritional quality and character,
mimicking the sun-drying of old.
