The Typica, Bourbon, Caturra, Pache and Catimor beans come from the land of the
Incas, Peru. They were harvested from small farms running along the Andes from
the border with Ecuador in the north, down to almost level with the capital
Lima. The cherry that surrounds the bean is washed off, resulting in a
crystal-clean cup and a real sense of where the beans came from. The Swiss Water
Process removes caffeine without chemical solvents, using instead hot water,
activated charcoal and the magic of science.
