It comprises high-altitude heirloom Arabica from Yirgacheffe in Ethiopia that
are naturally dried in the sun to give a full body and intense flavour; a
mixture of different varieties grown between the Mayan archaeological sites in
Guatemala including some slightly fermented honey-processed beans; and finally,
Robusta from India imparting lots of chocolatey richness. The result is a
jet-black brew offering dark chocolate ganache, black cherry, black pepper,
roasted nuts, caramel, molasses and liquorice. How such a rich and full-bodied
coffee remains so refined and silky, well that’s just a little bit of black
magic.
