To make pizzas as authentic and delicious as any pizzeria in Italy, our starting
point has always been the base. From a 'mother dough' starter, we create
sourdough pizza bases in the traditional Neapolitan style. After slow-proving
for 24 hours, we fire them in a wood oven before we add our toppings by hand.
The namesake of our pizza, and the inspiration for our maritime addition of
prawns marinated with fresh parsley, chilli, garlic and lemon, is the teetering
Amalfi Coast village of Positano. It is postcard-perfect Italy made real and we
have done our best to evoke its charm here. Our plump prawns are scattered among
scorched ribbons of red pepper to bring natural sweetness to the pizza.
