New Mexican Chilli Our inspiration comes from the state of New Mexico. We use a classic combination of Fairtrade red beans with sweet peppers and tomatoes, spiked with jalapeño chilli. Known to aficionados in that part of the world as "Bowl o' Red". Red Beans Originating from North America, they have a slightly sweetish flavour and a floury texture. Most often associated with Mexican cuisine, they are however used throughout the Americas and the Caribbean and also India, where they are known as rajma. Red beans are an excellent source of iron.
