Our artisanal pasta is made entirely by hand using flour from a selection of
durum wheat varieties that are cultivated and milled in Italy. Our pasta is
produced to obtain the optimal coarse texture, and finally dried at a very low
temperature for over 72 hours to maintain the integrity of the wheat's protein
and amino acids. The slow crafting of our pasta using centuries-old methods
ensures you experience the traditional, rustic flavour of Italy with each
mouthful.
