To make pizzas as authentic and delicious as any pizzeria in Italy, our starting
point has always been the base. From a 'mother dough' starter, we create
sourdough pizza bases in the traditional Neapolitan style. After slow-proving
for 24 hours, we fire them in a wood oven before we add our toppings by hand.
The soul-warming food around northern Italy's Dolomites inspired this pizza.
First, we grill our mushrooms with garlic, onion and parsley to intensify their
flavour, and scatter them on a creamy mascarpone base, which is infused by the
pancetta as it cooks and the flavours mingle. To finish, we add flakes of fior
di latte mozzarella and a sprinkling of aged Italian cheese. All in all, our
Rustica is an indulgent celebration of Italy's richest flavours.
