The Dexter is a Native Irish Breed originating from County Kerry. The smallest of the European cattle breeds they are about half the size of a traditional Hereford. Considered a rare breed until recently Dexter cattle may be small in stature but are very hardy, efficient grazers and can winter outdoors. The key to amazing beef flavours starts with cattle leading happy lives grazing outdoors and thanks to our mild temperatures and geographical location we have the ideal conditions for natural grass production giving lush pastureland for the Dexter to graze on. This delivers the unique flavour and rich marbling that the Dexter breed is famous for.
