Rosemary is a woody, evergreen herb with fragrant needle-like leaves. Sprigs can
be placed whole in a casserole or roast joint of meat or add finely chopped
needles to your recipe.
Serving Suggestion
Use sprigs of fresh rosemary tied together as a brush to baste your bbq meats
with and don't forget to add a few to the charcoal to infuse your cooking with
the delicious aroma.
Aubergine & Mozzarella Stack - Brush 1cm slices of aubergine with olive oil.
Chargrill on a hot grill. Combine a large bunch of chopped fresh parsley, finely
chopped fresh rosemary needles, 3 chopped garlic cloves and the zest of a lemon
to make gremolata. Alternately layer slices of aubergine, mozzarella and
gremolata. Heat the stack in the oven for 15 minutes.
