This cured ham from Vendée is a recipe which has been passed down through the
generations. It is dry rubbed with brandy and herbs and surface salted then
pressed between two boards to extract the juice. It is traditionally eaten with
"Mogettes" (white beans) from the Vendée region. This is a very enjoyable simple
dish which is quick to make.
