At GAIL’s, we are passionate about minimising waste, so we’re excited to be the
first bakery to make a loaf made from surplus bread. Made using white levain,
roughly 1/3 of GAIL’s Waste-less Sourdough is made with yesterday’s bread and
the taste varies slightly depending on the loaves used, but it is always soft
and chewy.
HOW TO ENJOY
The GAIL’s Waste-less Sourdough is a loaf for all occasions: enjoy thickly
sliced and toasted with melted butter, spread with jam, or as an open sandwich.
STORAGE
Baked fresh and never with any preservatives, we recommend storing GAIL’s
sourdough in a cool, dry place. To keep the bread for longer, slice immediately
and store in an airtight container in the freezer, taking out slices and
toasting, as desired.
Towards the end of its life, we recommend transforming the loaf into bruschetta
or even into croutons to toss into a panzanella.
