FLAVOUR IS A FRONTIER
Natoora Spanish Black Iberiko Winter Tomatoes
- Black Iberiko is one of the four varieties that we have brought under one
banner – Winter Tomatoes – to mark out tomatoes that can only reach their full
potential during the cooler months.
- From November to May, skilled growers can exert high levels of water-stress on
their plants which would be impossible in hot, dry seasons. They grow in saline
coastal regions, in poor, free draining soils; two factors that add to their
stress rooted-growing.
- Grown by José in Almería, Iberiko have wine dark skin with mild lobing and
dark green collars. Find a balance of bright acidity and umami sweetness in
their firm flesh.
Take it further
- Best served raw, lightly seasoned and drizzled with extra virgin olive oil.
- If left to soften, these make a fantastic and simple pasta sauce. Simply cook
down with a little salt and olive oil.
