They grow in saline coastal regions, in poor, free draining soils; two factors that add to their stress rooted-growing.  - Grown by José in Almería, Iberiko have wine dark skin with mild lobing and dark green collars. Find a balance of bright acidity and umami sweetness in their firm flesh.  Take it further - Best served raw, lightly seasoned and drizzled with extra virgin olive oil.  - If left to soften, these make a fantastic and simple pasta sauce.
