Natoora Marinda Winter Tomatoes
- Marinda is one of the four varieties that we have brought under one banner –
Winter Tomatoes – to mark out tomatoes that can only reach their full potential
during the cooler months.
- From November to May, skilled growers can exert high levels of water-stress on
their plants which would be impossible in hot, dry seasons. They grow in saline
coastal regions, in poor, free draining soils; two factors that add to their
stress rooted-growing.
- We consider Marinda to be the most complex of all the Winter Tomatoes that we
source. Large, with extreme lobing, their savoury intensity is balanced by
sweetness that only comes from slow growth in cool temperatures.
- With hot temperatures now enduring well into October in Sicily, the season for
Marinda may shift further and further as the heat makes it impossible for
growers to exert the water stress needed to bring out Marinda’s distinctive
profile.
Take it further
- Best served raw, lightly seasoned and drizzled with extra virgin olive oil.
- If left to soften, these make a fantastic and simple pasta sauce. Simply cook
down with a little salt and olive oil.
