This Gorgonzola Dolce D.O.P. is aged for 1-2 months by master affineurs Giolito
in the small Piedmont town of Bra. The owner, Fiorenzo Giolito, is promoter of
the Slow Food movement and co founder of the annual "Cheese", a well established
culinary extravaganza hosted in Bra, where small producers and less known,
traditional cheeses find their perfect showcase in a struggle to survive the
globalisation of the food industry.
