- We select our cauliflowers for their dense, tightly packed florets and tender
stalks.
- The entire plant has value - treat the outer leaves as you would spring greens
or kale.
- Our growers are actively trying to reduce the use of pesticides in their
practices in order to make their farms more sustainable. Any small insects found
in the leaves or around the base of the cauliflowers are testament to this
commitment. Simply trim and wash as normal before use.
Take it further
- Break into florets, roast with dried cumin, coriander and walnut oil.
- Bake in a gratin with anchovy and parsley.
