About the Dish: Mafaldine (Italian for 'little queens') are an alluring, ribbon-shaped pasta with beautiful wavy edges and a striking appearance. In 1995, the Italian government commemorated the Princess Mafalda of Savoy, in whose honour reginette (also known as 'mafaldine') were created, with a limited edition stamp. Our chefs simmer the ragù for several hours with plenty of aromatics and Chianti red wine, until the meat yields all its rich flavours. To top it all off, we serve with delicious Italian formaggio.
