ABOUT THE DISH
Seafood plays a pivotal role in the cuisine of Italy, especially in its coastal
regions. Indeed, the inspiration for this dish comes from the town of Praiano,
which clings to the cliffside along the Amalfi Coast and looks out onto pastel
blue waters. In Praiano, sea bass is often the catch of the day at the town’s
trattorie, with guests enjoying the fresh fish with a cold glass of white wine.
In homage to this evocative seaside scene, our chefs have this week prepared
filled pasta with sea bass, also known as soli. It’s designed to spirit you away
to warmer and more peaceful climes. It’s also worth mentioning that sea bass is
full of healthy omega-3 fatty acids and is naturally low in calories, making
this dish a salubrious choice. We’ve paired our ravioli with a beautiful lemon
