This Pecorino Toscano DOP Stravecchio has been aged for about six months; the
paste is white, compact and crumbly. The flavour is intense and not overpowered
by its saltiness. The rind is dark as it is rubbed with ash and olive oil to
help the preservation, strictly according to tradition. It's produced by il
Forteto in the heart of Tuscany, using only Tuscan milk.
