- A semi-hard sheep's cheese made from fresh ricotta, drained and hand salted
with coarse sea salt.
- We source this from the Caruso family near the Erei mountains in central
Sicily.
- The Carusos work with small farmers in the region to bring in the milk of
native breed sheep.
- Flocks are moved from the mountains to the valleys, feeding on pasture – a
rich local diet which informs the flavour of the cheese.
